Grilled Vegetable Sandwich

I had a solid plan. Dinner was going to be a healthy grain salad with lots of grilled veggies, some leftover olive tapenade and a quick vinaigrette. But the longer I stood on the hot and sticky train, getting hungrier and hungrier as it inched along, I realized what I really wanted was a sandwich.

I was still thinking about the on-the-fly sandwich I'd put together for the summer's first outdoor movie in Grant Park (All About Eve) earlier in the week. I'd packed some goat cheese, the olive tapenade and some cubed roasted eggplant, planning to get a big baguette and share with the group. But everyone else ended up making other dinner plans before the show, so I picked up a mini multigrain baguette instead and made myself a sandwich. It was delicious.

So I scrapped my healthy salad plan and decided to make another version of my tasty sandwich. I figured I'd pick up some more multigrain bread and it would still be relatively healthy.

But my neighborhood source for bread only had regular baguettes by the time I finally got off the train, so I caved again. My new sandwich plan would not be deterred.

I spread some herbed goat cheese on the sliced baguette, topped with some sliced zucchini I'd grilled in the grill pan, slathered on the last of the olive tapenade and topped with my favorite Peppadew peppers.

If I had my choice, the eggplant/multigrain version is still the winner, but served up with a side of grilled cherry tomatoes with balsamic dressing, this one was still pretty gosh darn delightful.
